Coq Au Vin

(Chicken with Wine)

Ingredients:

500grams of Large Field Mushrooms
2 number 10 (I Kilo) chickens
1 Litre chicken stock
1 (750 ml) bottle of Merlot (or like) wine
6 large or 12 small onions
1 head of garlic
1 bouquet garni
4 capers
50g butter

Method:

In pressure cooker (or fast cooker) melt butter on medium heat. Layer with half the quantity of mushrooms and then cover with half the quantity of chicken and add half of your stock.

Next layer, add remainder of mushroom followed by onions, garlic, bouquet garni and add one caper for each corner. Add remaining chicken and stock.

Bring to boil and then reduce heat to simmer. Simmer for two hours. Then add whole bottle of wine and simmer for a further hour.

Note: If you do not have a pressure cooker or fast cooker the cooking times must be doubled.
